These little oat squares are so rich and chocolaty, it is hard to believe they are actually good for you! They are also gluten-free and vegan. I have been making these to have on hand when I need a snack and don’t want the temptation of a quick sugar fix. These are made of very few ingredients and literally don’t take more than a few minutes to make. Best of all, you probably have all of the ingredients on hand, and the recipe can be easily multiplied to fit your needs. This recipe does not make a big quantity, but you really want to cut those small because they pack a punch!
Fudgy Oat Bites
1 cup rolled oats
1/2 cup natural peanut butter
2 tbsp cocoa
1/4 cup raw, non-pasteurized honey*
1 tsp espresso powder
Mix all ingredients in the food processor until it looks like crumbly dough. Flatten the dough into a 1″ high rectangle and cut into 1″ squares.
*Note: These are not too sweet. If you like your treats on the sweeter side, you can add a generous 1/3 cup of honey, which will also make the texture a bit more fudge-like or softer.
