Most often, the challenge of cooking is not in finding a recipe and making it but in finding an idea! How often do I find myself peering into my fridge waiting for inspiration to strike! I just found myself searching for an idea for a quick lunch. I had some leftover cooked chicken breasts and thought of making quesadillas. Quesadillas are such a quick and easy meal. Really, no recipe is needed! You can add a salad or just enjoy them with some salsa.
Most of the ingredients are just pantry staples. Quesadillas are very adaptable, though – if you only have cheese and nothing else, just make cheese quesadillas!
For a healthier version, use whole grain tortillas. Or, for a gluten-free option you can use corn tortillas.
Easy Chicken Quesadillas
approx. quantities for 1 10″ tortilla
1/4 shredded cooked chicken
1-2 tbsp sour cream
1-2 tbsp salsa
3-4 tbsp shredded cheddar cheese
optional: 1-2 tbsp sauteed peppers, onions, or sliced black olives
Spread the sour cream on each tortilla, leaving only the edges free. Spread salsa on top. Sprinkle cheese, chicken and vegetables, if using, on one half of the tortilla only and fold over.
Heat butter in skillet, add tortilla and cook over medium heat until browned. Flip over, brown the other side and serve.
