Chickpea salad sandwich – vegan

Hummus has become an ubiquitous dip! Wonderfully creamy, it is bursting with flavour and nutrition, especially if made from scratch. Really, boiling chickpeas is no big deal! Last week, as I was boiling chickpeas to make some hummus, I found that I had thrown way too many chickpeas into the pot and was looking for something else to make with them. I decided to make a salad and use it as a pita bread filling. To keep with the middle eastern flavours, I used tahini sauce and a little bit of olive oil for the dressing – completely vegan! – added some cilantro, and it almost tasted like falafel!

If you are not vegan or don’t have tahini in your fridge, this salad is equally delicious with mayonnaise. Substitute the 3 tbsp of tahini with 3 tbsp of mayonnaise, omit the water and olive oil but add lemon and cumin as per the recipe below.


Chickpea salad sandwich makes a great lunch and is packed with vegetables. Just a few spoons pack a punch, it is a very satisfying meal. You can fill it into a pita or eat it as a salad. I mashed the chickpeas partially to have a creamier sandwich filling but if you eat it as a salad, it would look better if you don’t mash the chickpeas.

2 cups cooked chickpeas, partially mashed if using as a filling
1 bunch green onions, sliced
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
1/4 cup tahini sauce – see recipe below –
1/4 cup sliced black olives, optional
1/4 cup chopped cilantro
1 tbsp olive oil
a dash of chipotle chili powder or cayenne pepper
salt and pepper to taste

Combine all the ingredients, drizzle with some more lime or lemon juice if needed.

This will last up to a week in the fridge.

Tahini sauce

3 tbsp tahini
2 tbsp water
juice of 1 lemon
1 clove of garlic
salt and pepper to taste
1 tsp cumin

The easiest way is to process all the ingredients with an immersion blender until smooth.
If you mix it by hand, start with the tahini and add the liquid little by little, stirring constantly, until the desired consistency is reached. Then crush the garlic and add with the other spices.
