White chocolate chips and cranberry orange cookies

Cranberry White chocolate orange cookies 2

I can barely believe that the Christmas season is starting. Where does the time go? So finally, I have started bringing out the decorations, and the next step is stocking up on cookies. These white chocolate chips and cranberry orange cookies are great for Thanksgiving as well as for Christmas. The cranberries add a nice touch and some colour, and the white chocolate provides some sweetness. And what better flavour to bring it all together than orange? I just love those cookies!

This recipe is very easy to put together. The only important thing is that you have to watch them closely so that they are not over-baked. Just a little too long in the oven, and they become hard. So take them out before they are golden and still light in colour.

I found this recipe at landolakes.com, modified it a little and added the white chocolate.

Cranberry White chocolate orange cookies

Ingredients

1 cup sugar
1 tbsp vanilla sugar
1/2 tsp orange extract
1 cup butter
1 egg
2 cups flour
1/2 tsp baking soda
1 cup or 6 oz. white chocolate chips
zest of 1 orange
1/2 cup dried cranberries

Optional:
1/4 cup sugar
1 tsp orange zest

Instructions

Preheat the oven to 350 degrees.
Cream the sugars and the butter until light and fluffy. Add the egg and the orange extract and beat for a minute.
Mix the flour and baking soda together and mix into the batter until just combined.
Add the white chocolate chips, the orange zest and the cranberries.
Using a cookie scoop, drop 1″ balls onto a baking sheet and bake for about 10 minutes.
Let cool on the baking sheet for about a minute before removing them.
*Optional: For an added touch, roll the balls in granulated sugar before baking. If you mix the sugar with a bit of orange zest, it looks even better!
